THE LAB

Vacuum pressured maceration is a very unusual technique which allows us to robustly extract all of the required oils and flavours from our more woodier and hardier botanicals.

The vacuum pressure applied in this process is double that which is found at the summit of Mount Everest.

We split our recipes into delicate botanicals and hardier botanicals and we approach them with different flavour extraction techniques.

Using ultra sonic sound frequencies allows us to gently remove the delicate flavours we want from our botanicals, leaving unwanted plant mass and flavours behind, preventing them from being stewed and boiled within the still.

Our lab gives us the freedom to experiment with liquid innovation allowing us to bottle and capture something truly unique and inquisitive every time. We are utilising and pioneering unusual techniques and approaches, such as ultra sonic sound frequencies and vacuum pressured maceration during our distilling process.

TASTING NOTES:

Nose: Bold juniper with fresh pine aromas and undertones of sweet lemon tea.

Palate: A smooth creamy mouthfeel with sweet spice and subtle warming cardamom notes

Finish: A crisp electric palate, followed by dry black tea notes
